Continuous training and opportunities for career progression within the company **Job Description:** We are seeking an Assistant Oenologist to join the technical team of our winery, supporting all stages of winemaking and quality control. The candidate will oversee vinifications, perform physicochemical and sensory analyses, and participate in cellar operations and bottling. **Main Responsibilities:** * Support vinification processes (fermentation monitoring, racking, treatments, and stabilization). * Conduct laboratory analyses: pH, total acidity, alcohol, SO2, residual sugar, among others. * Participate in organoleptic tastings and quality recordkeeping. * Support cellar operations: filling, CIP cleaning, basic equipment maintenance, and stock management. * Maintain records, production files, and ensure compliance with HACCP standards and Good Manufacturing Practices. * Collaborate with the team on logistical tasks and preparations for harvest and bottling seasons. **Requirements and Qualifications:** * Degree in Oenology, Viticulture, Food Technologies, or related field. * Prior experience in a winery or relevant internship is highly valued. * Knowledge of physicochemical and sensory analysis techniques. * Familiarity with food safety standards (HACCP) and good laboratory practices. * Teamwork skills, organizational ability, attention to detail, and flexibility for seasonal working hours. * Driver’s license is a plus. * Computer literacy (Excel) and preferably experience with winery management software. **Preferred Competencies:** * Driver’s license and willingness to travel.
