Job Description Responsible for creating and updating the wine list and advising customers on wine selections based on menu choices. Responsibilities also include supervising wine service and collaborating with the Chef to renew new selections in order to achieve the best cost-to-quality ratio. Main Responsibilities * Create and update the wine list in coordination with the Chef and/or F&B Director and/or Head Waiter; * Recommend food and wine pairings; * Advise guests on wines based on their personal tastes and food choices; * Inform customers about different wine varieties and prices; * Ensure wines are served at the correct temperature and in appropriate glasses; * Store opened bottles properly to preserve flavor; * Manage wine service and ensure stock levels; * Train the dining room team on available wines; * Negotiate purchase prices with suppliers; * Organize wine tasting days or wine-related events; * Comply with all health and safety regulations; * Support other areas whenever requested. Experience We Are Looking For * Experience as a Sommelier, Wine Steward / Stewardess, or similar role; * Ability to create food and wine pairings; * Extensive knowledge of different wines and the regions that produce each type; * Knowledge of local vineyards and wineries; * Understanding of the winemaking process; * Sommelier certification is an advantage / plus; * Availability and flexibility in scheduling; * Strong communication and interpersonal skills; * Enjoys teamwork and mutual support; * Ability to quickly establish empathy; * Dynamic and proactive attitude; * Good personal presentation; * Thorough understanding of DHM's DNA; * Respect for the group's philosophy and vision.
